503 Distilling is a local, Oregon City based distillery offering unique hand crafted cocktails available in Oregon liquor stores in 12oz. cans. We currently offer The Wicked Mule, which is our take on the famous moscow mule cocktail and the Blood Orange Greyhound- the classic greyhound using pureed grapefruit, pureed blood orange, vodka, with a dash of simple syrup. More cocktails are in the works and are or will be available at Oregon farmers markets and liquor stores.

Carl's Bitchin Biltong
What is Biltong? The word biltong comes from the Dutch words bil ("rump") and tong ("strip"). Biltong is a variety of dried and cured meats that originated in South Africa. Traditionally various types of meat have been used to produce it, ranging from beef and game meats to fillets of ostrich from commercial farms. Today, it is typically made from fillets of beef cut into strips following the grain of the muscle and after curing it is thinly sliced across the grain. It is similar to beef jerky in that they are both spiced and dried meats. However, the typical ingredients, taste and production processes differ greatly, the main difference being that biltong is dry cured and subsequently sliced whereas jerky is sliced and saturated with sugar prior to smoking the meat dry.

Matt is a third generation farmer, He graduated with a BS in Agriculture from Oregon State University and began farming on his own in 1984 along with his wife Kathy. We raised four children who are now grown and starting families of their own. Two of our childern are envolved in the operation full time and one part time Having grown up on a strawberry farm made growing our own strawberries seem a natural way to go. In the early years we grew strawberries and cucumbers with everything being sold to processors, over the years we have moved towards selling our produce in the local market through the farmers markets. We now send over 80% of what we grow to farmers markets, local stores, numerous roadside stands and school lunch programs. Our list of crops now includes blueberries, raspberries, blackberries, table grapes and what we’re known best for STRAWBERRIES. Selling our produce to local markets is a great way to share with our community what we do. The varieties we grow are chosen based on flavor, size, and hardiness. We are proud to be a sustainable farm which means to us that our land will be healthy and well taken care of for future generations, included in many of our sustainable practices are cover crops to keep soil in its place, mulches for weed control , integrated pest management for pest and disease control, drip irrigation for water conservation as well as soil erosion. How our produce is picked, packed and cooled are just as important to us as how they are grown. Our goal is to ensure our customers a perfectly picked berry to take home to their families. They say farming is a way of life. To choose farming as a profession is to choose a way of life. We love what we do and we love sharing what we do.
